The Organic Family Cookbook GIVEAWAY

Anni Daulter is my new idol. ;) She is an amazing author, chef, mother, editor, and human. She's creative, conscious, nurturing, wholesome, and 100% natural in every way. I have loved following her work over the past year and a half and look forward to what is next! (Hopefully more cookbooks! She truly inspires me in the kitchen!!!)

Anni Daulter is the author of the Organic Family Cookbook, Ice Pop Joy, Organically Raised: Conscious Cooking for Babies and Toddler , editor of bamboo magazine- conscious family living and is the mom of 4 children. (Be sure to check out her sites for recipes!) Anni taught herself how to cook and then continued learning at a Zen Buddhist retreat- Tassajara. She also opened a fresh organic baby food company- Bohemian Baby.

I was sent a copy of Anni's newly released work of art, the Organic Family cookbook: growing, greening, and cooking together, and I am truly blown away. Not only does the cookbook include the most delicious wholesome recipes, it is a work of art with the photographs by Alexandra DeFurio. Anni has incorporated the normal cookbook stuff with a unique taste of her lifestyle. She talks about her family, how they are green, how they cook together, what her children like, and even some of their recipes! It has seriously raised the bar for cookbooks.
There are 7 food categories in the Organic Family cookbook: Naturally Tasty Breakfasts, Simple Snacks, Wholesome Lunches, Family Favorite Dinners, Savory Sides, Refreshing Desserts, Homespun Extras. Each chapter includes 9-12 recipes with stunning full size photographs of the dish, and litte personal extras throughout the chapter that are either about Growing Together, Greening Together, or Cooking Together.
I spent my weekend cooking different recipes from the Organic Family Cookbook, and coming from 2 people who have SPD/texture issues- YUMM!!  I love the natural ingredients and how most recipes are low in sugar and are made with unique flours. I like trying new things and my pallet thoroughly enjoyed the new flavors!
Here is what we made:
 Zoe's Favorite Baked Parmesan-Crusted Artichokes (artichokes with balsamic vinegar, garlic, and parm. SOOOO good!)
 Goodwill Banana Bread (best banana bread I've ever had!)
 Fall Pumpkin Spiced Cookies (soft, chewy pumpkin yumminess. Goes great with a glass of milk!)
 Natural Cran-Strawberry Red Roll-ups (in the oven cooking. I burnt the edges, but they still taste wonderful)
All My Love Whole Grain Honey Bread (I will never buy bread again!)
Granola Bars
Anni said I could share this recipe! These are beyond amazing!!
2 cups whole grain oats
1/4 cup sunflower seeds
1/2 cup dried cranberries or cherries
1/4 cup wheat germ
1/2 cup sliced almonds
2 pinches sea salt
1/2 cup almond butter
3/4 cup honey
1 tablespoon flax oil
1/4 cup brown sugar
mini chocolate nibs (optional)

Preheat oven to 350F. Grease a ceramic or glass 9X13-inch baking dish and line with parchment paper. 

Mix Oats, sunflower seeds, cranberries, wheat germ, and almonds together in a bowl. Spread mixture on a sheet pan and toast in preheated oven for 8 minutes. Return mixture to large bowl.

In a medium saucepan, combine salt, almond butter, honey, flax oil, brown sugar, and chocolate nibs (if using). Bring to a boil over medium heat and immediately remove from heat. Pour over oats mixture and combine until dry ingredients are evenly coated. 

Transfer to the lined baking dish. Press mixture down and together by folding over parchment paper to press down. Tear off edges of parchment paper so it does not cover the mixture when baking. Bake for 25 minutes. 

Let cook for up to 2 hours and then cut and serve. 

I cheated and ate a bar after an hour-  I LOVED it warm and gooey. Once it cools, it hardens like regular granola. This is by far the best granola I've ever had!
